做法:洗净宰好鲫鱼,洗净淮山和薏(yì )米。用清水把陈(chén )皮泡软,拍裂一(yī )小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油(yóu ),待油六成热下鱼,煎至微(wēi )黄。煮沸(fèi )瓦煲里的清水(shuǐ ),放(fàng )入(rù )煎(jiān )煮(zhǔ )好的鲫鱼和其他(tā )材料,武火煮沸,转中(zhōng )小火煲一个半小时,下盐调味即可品尝。 -
