做(zuò )法:洗净宰好鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清(qīng )水(shuǐ )把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用(yòng )姜(jiāng )块在锅上擦一遍,放两勺油,待油六成(chéng )热下鱼,煎至(zhì )微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材(cái )料(liào ),武火煮沸,转中小火煲一个半(bàn )小(xiǎo )时,下盐调味(wèi )即可品尝。 -
