做法(fǎ ):洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和薏(yì )米。用清水把陈皮泡软(ruǎn ),拍(pāi )裂一(yī )小块姜,热锅,用(yòng )姜块在锅上擦(cā )一遍(biàn ),放两(liǎng )勺油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲(bāo )里的清水,放入煎煮好的鲫鱼和其他材(cái )料,武(wǔ )火煮沸,转中小(xiǎo )火煲一个半小时,下盐调味即(jí )可品尝。 -
