做法(fǎ ):洗净宰(zǎi )好鲫鱼,洗净淮山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热(rè )锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待油六成热下鱼,煎至微黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清水,放入煎煮(zhǔ )好的鲫鱼和其(qí )他材料,武火煮(zhǔ )沸,转中(zhōng )小火(huǒ )煲一个半小时,下盐调味即可品尝。 -
