做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮山和薏米。用(yòng )清水把陈皮泡软,拍裂一小块姜,热(rè )锅,用(yòng )姜块在锅(guō )上擦一遍,放两(liǎng )勺油,待油六成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他(tā )材料(liào ),武火煮沸,转中小火煲一(yī )个半(bàn )小时(shí ),下盐调味即(jí )可品尝。 -
