做(zuò )法(fǎ ):春(chūn )笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀(yún ),加入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖(gài )大火(huǒ )煮开后转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。 -
