做(zuò )法:春笋切成片后加少许(xǔ )盐捞出(chū )后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入(rù )生(shēng )抽、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清(qīng )水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。 -
