做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山和薏(yì )米。用清(qīng )水把(bǎ )陈(chén )皮泡(pào )软,拍裂(liè )一小(xiǎo )块姜,热锅,用姜块在锅上擦一遍,放两勺油,待(dài )油六成热下(xià )鱼,煎至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和其他材料,武火(huǒ )煮沸,转中(zhōng )小(xiǎo )火煲一个半(bàn )小时(shí ),下盐调(diào )味即可品尝。 -
