做(zuò )法:洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏(yì )米。用清水把陈皮泡软,拍裂一(yī )小块姜(jiāng ),热(rè )锅,用姜(jiāng )块在锅上擦一遍(biàn ),放两勺油,待油六成热下鱼(yú ),煎(jiān )至微黄。煮沸(fèi )瓦煲(bāo )里(lǐ )的清水,放入煎煮好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小火煲一(yī )个半小时,下盐调味即可品(pǐn )尝。 -
