做(zuò )法(fǎ ):洗净宰好鲫鱼,洗净淮(huái )山和薏米。用清水(shuǐ )把(bǎ )陈皮泡(pào )软,拍裂一(yī )小块姜,热锅(guō ),用姜块在(zài )锅上擦一遍,放两勺油,待油六成热(rè )下鱼,煎至微黄。煮沸瓦煲(bāo )里(lǐ )的清水,放入(rù )煎煮好(hǎo )的鲫鱼和其他材料,武(wǔ )火煮沸,转中小火煲一个半(bàn )小时,下盐(yán )调味即可品尝。 -
