做法:洗净(jìng )宰好鲫(jì )鱼,洗净淮山(shān )和薏(yì )米。用清水把陈皮泡软,拍(pāi )裂一小块姜,热锅,用姜块(kuài )在锅上擦一遍,放两(liǎng )勺油(yóu ),待油六成热下鱼,煎(jiān )至微黄。煮沸瓦煲里的清水,放入煎煮好的鲫鱼和(hé )其(qí )他材(cái )料,武火煮沸,转中(zhōng )小(xiǎo )火煲一个半小时(shí ),下盐调味即可品尝。 -
